One study confirmed that foods rich in vitamin C - such as broccoli or green beans - are particularly sensitive to loss of nutritional value.

Another study showed that the antioxidant content of frozen blueberries was even higher than that of fresh blueberries after three weeks. An uninterrupted cold chain is the key to frozen foods. This means you should take your produce home from the supermarket as soon as possible, preferably in an insulated bag.
